Cooking for Caseg Fraith, October 2010

This is a wiki (editable web page) to organise cooking for the CUHWC trip to Caseg Fraith (Snowdonia) this weekend. The kitchen has several electric ovens and hobs, two fridges, a freezer and a microwave. All utensils, crockery, cutlery, pots and pans are provided, along with washing up materials. The club will supply cooking oil.

Click edit at the top to change the text (you'll need to be logged in to your account the website first - click here to register if you don't have one). You can either suggest a meal idea or join one of the existing ones and you're obviously also welcome to sort yourself out (move your name to 'Independent'). The person who suggests the meal is responsible for arranging the ingredients - everyone else in the group should bring money on the trip to pay for their share, and expect to help with the preparation and washing up.

Timetable
Meal suggestions by Tuesday evening. Finalise groups by Wednesday night so the person suggesting the meal knows how much they have to buy and have a couple of days to do the shopping.

Coq au vin

I've been in the club a year now and have managed to evade cooking duties, but this time I can't think of an excuse so here goes...

  • Carrot and butternut squash soup
  • Coq au vin with mashed potatoes and leeks
  • Possibly Hannah's pudding - sounds good! I should think you can get quark in the big supermarkets, if not, might ricotta or cottage cheese do instead? Are you willing to get the ingredients? --> Yes, of course, I will bring the ingredients for the dessert! And thanks for the quark tipp, I will figure somehting out... Hannah.

I'm planning to get the coq au vin at least half made on Friday, so hopefully this will be a relatively low-faff cooking option!

Vegetable stir-fry

Sorry this may seem a bit boring as I've done this several times before, but it feels appropriate as this was the same meal I cooked at this bunkhouse on my first weekend trip two years ago ...

Starter
Carrot, sweet potato and orange soup.
Main
The BEST !!! :D (that's not Matthew being bigheaded btw for all that don't know him :) B) Vegetable stir-fry with lemon and ginger, served with noodles (can be egg or rice noodles depending on if any vegans sign-up).
Dessert
If anyone else wants to volunteer to do this that would be great, otherwise I'll do a crumble of some sorts. -- Tiramisu (though don't really know if i can make a vegan friendly version) Dave M

Halloween Option

This meal can be vegan or organic (for diary/meat) or cope with any other dietary requirement, depending on who wants what. Starter & Main are vegan, pudding vegetarian.

Ouzi

This meal can be vegetrian by simply not adding the mince meat to your dish (it will cooked separately).

Starter
Lentils soup.
Main
Ouzi: a middle eastern dish: rice, peas, sweet corn, raisins cooked with the seven spices and cinnamon, served with minced beef meat, fried almonds and yoghurt/cucumber/mint/garlic salad.
Dessert
Hariseh: a middle eastern cake(ish): coconut+semolina+yoghurt+loads of sugar+Almonds..etc
